sweet bites-1

Today I’m struggling a bit about what I should write in this post. So much to say but somehow lately there is not much time to sit down and write it. (note to myself: need extra hours in day; find solution very soon)
As today it’s a love it or hate it day; I mean Valentine’s Day, I decided to share with you this easy recipe which is simple called by me “sweet bites”. Believe me or not but this little treat is so sweet. Sweet like loveee…(hahahahaha)
Unfortunately this is not my invention but a great find on one of my apps. Yes, I’m one of those people ( let’s not pretend that you are not) who rely on them a lot. They save me time and solve many dilemmas, especially in my gluten-free world ;)

Ok but let’s not so tarry anymore and simply enjoy chocolate dates and walnut balls.sweet bites

ingredients (serves 10)
-2 cups pitted dates
-1 orange zest
-1 cup walnuts, finely chopped
-100 g dark chocolate

recipe:
-Chop dates roughly. Place in a bowl and microwave on high for 1 minute. Transfer to bowl and add orange zest. Use a stick blender or food processor to blend to a finely chopped paste.
-Add walnuts to dates and knead well to combine
-Using cold wet hands, roll in small balls. Set aside.
-Break or chop chocolate in small pieces. Melt chocolate slowly in a microwave or double-boiler. Use a cocktail fork to dip each ball in chocolate. Turn to ensure even coverage. Lift from bowl, allow any excess to run off, then transfer to greaseproof paper on top of plate or board.
Sprinkle tops with the walnuts and refrigerate to cool.
